Octavium is the latest dining destination by acclaimed chef Umberto Bombana, and also the younger sibling of famed Italian restaurant 8 1/2 Otto e Mezzo. Offering fine-dining cuisine with a more modern approach, the kitchen at Octavium is Chef Bombana’s playground to experiment with new dishes. His “Grand Cru” Chocolate Soufflé ($220) is light and fluffy like a marshmallow, and you feel the intensity of chocolate in every bite. It even comes with a scoop of hazelnut gelato on top since nothing goes better with chocolate!

An American grill, smokehouse, and butcher’s concept combined into one, Rosewood Hotel’s Henry pays homage to the time-honoured steak tradition inspired by the flavours and ingredients of America’s southernmost states. Their dessert section cannot be missed, especially with the creative Cornbread Soufflé ($138), the flavours and textures of which should be quite novel to most Hong Kong diners. It manages to retain the chewy texture of cornbread while being as light and fluffy as soufflés must be. The dish comes drizzled in bourbon caramel and a scoop of bacon ice cream for an extra dash of character!

Landmark Mandarin Oriental boasts its fair share of big-name restaurants to impress diners—Amber and Sushi Shikon, anyone?—but let us direct your attention to the relatively hidden restaurant with high-quality food to rival the heavy hitters. Check out quiet and humble SOMM, nestled in-between chef Richard Ekkebus’s famed restaurant and Sushi Shikon. Their Abinao Chocolate Souffle with Cacao Sorbet ($128) asks for fifteen minutes of preparation time and certainly does not disappoint. The rich, luscious aroma of chocolate can be detected even before the soufflé arrives on your table. Perfectly-risen and balanced with intense chocolate just an inch from sickening sweet, try having the sorbet with a bite of soufflé to get on your way to chocolate heaven!

There is no doubt in our minds that Joël Robuchon restaurants always offer exceptional cuisine. In Hong Kong, there's Le Jardin for a more intimate setting that looks out on the rooftop garden, or the L’Atelier that is designed with a circular bar enveloping an open kitchen for guests to survey all aspects of the cooking. In both areas, the Signature Chocolate Soufflé ($220) is available to all guests. It is one of Joël Robuchon's signatures that you can most probably find in his other restaurants around the world, typically servied with a scoop of rich pistachio ice cream.

Bistro du Vin is designed to be a dynamic and fun experience, similar to a family gathering in provincial France. They break away from the traditional French dining experience and actually recommends you to order items to share, which totally works in our favour because we can also try more! They have two soufflés on the menu for you to choose from, Grand Mariniere Souffle ($90) or the Coconut Rum Souffle ($90). Both are served in mini ceramic pots with handles for a touch of French aesthetic and comes with either vanilla or chocolate ice cream.

Originally opened in 1969 and reincarnated at Hyatt Regency Hong Kong, Tsim Sha Tsui, Hugo’s is “where classic meets timeless.” The restaurant is decorated with a suit of armour, ornate mirrors, chandeliers, guns and shield plaques for a grand and regal vision that also applies to their cuisine. Hugo’s Lemon Souffle ($165) asks for 20 minutes of preparation time with a Grand Marnier and chocolate-cognac sauce that is prepared tableside, definitely fit for royals!

Épure is definitely one of the prettiest restaurants in Hong Kong, with walls hand-painted with a scenic forest and a colour scheme of green and gold found in the rest of the furniture, cutlery and flower arrangments. With such a striking background, the French cuisine they serve also stands out. With set menus to choose from for lunch and dinner, try to ask the waiter for the Soufflé of the Day as flavours change regularly. Beautifully-risen and as light and fluffy as marshmallows, their soufflés are packed with flavours such as pistachio, vanilla, almond, and more!

Caprice offers first-class innovative French cuisine and first-class views of the Victorian Harbour, making it one of the most popular restaurants for special occasions and celebrations. The two things that stand out for us is their cheese room that houses the largest selection of French artisanal cheese, and their soufflé. The Soufflé à la Noix de Coco Torréfiée et Sorbet Coco ($220) is a toasted coconut soufflé that comes with a scoop of coconut sorbet. It has the perfect balance of sweetness and coconut, and its airy texture just leaves you wanting more!

Maze Grill Hong Kong takes its menu inspiration from the three Maze Grill restaurants located in London, where steaks are grilled to perfection over a charcoal-fired Josper grill. Located in Harbour City, it offers a grand view of the Victorian Harbour on the Hong Kong Island side (arguably the better side fo the view). Their Soufflé ($128) is the most aesthetic dish to go hand-in-hand with a beautiful view. Served in a cute copper pan, their raspberry soufflé comes with a scoop of raspberry sorbet, giving you the sweetness to finish off a greasy meal of beef wellingtons and other meats.

Tai Ping Koon is the grandfather of “soy sauce Western” cuisine, a type of fusion cuisine you can find everywhere in Hong Kong—it’s representative of how locals made the most of our colonial past. Inspired by charming grand cafés of the Old Continent, this established restaurant offers contemporary takes on classic European cuisine and a seasonal approach to its menu, producing dishes that criss-cross the varied region. Their fluffy Chocolate Soufflé ($120) comes with a scoop of raspberry ice cream and takes twenty minutes to prepare—a good thing that comes to those who wait. Likewise, the only thing better than a soufflé is an even bigger soufflé, and we’ve heard that The Continental has a history of serving up giant soufflés to sate up to four hungry diners, so keep your eyes for any special announcements!
